This recipe takes me back to when I was a little girl on Sunday nights during the Summer. My mom and dad would make this perfect specialty for our family. Hope it becomes a tradition for you and your loved ones!
Fresh Fruit Ice Cream
Fresh Fruit Ice Cream
4 cups fruit puree
2 1/2 cups sugar
4 eggs*
1 pint half & half
1 pint whipping cream
1/2 tsp. salt
2 tsp. vanilla
1/8 tsp. almond (if using peaches)
Mix well in ice cream canister. Place in electric ice cream maker surrounding with ice and rock salt. Use the ratio of 8 cups ice to 1 cup rock salt. Will need at least 24 to 32 cups of ice. When the ice cream is complete, serve "soft" ice cream immediately or cure in freezer for 2-3 hours for defined scoops of ice cream. Enjoy!
*For a substitution, 4 eggs = 1 cup pasteurized egg product
Note: Featured ice-cream is Fresh Strawberry, however Peach and Strawberry Banana are wonderful choices as well.
