A Chocolate Lover's Paradise!
2 Cups Sugar
1 Cup Butter
4 Eggs
2 tsp. Vanilla
1 tsp. Salt
1 1/2 Cups Flour
1/3 Cup Cocoa
1 Cup Chopped Pecan's (optional)
1 Small bag mini Marshmallows
Cream together, sugar, butter and eggs. Add in Vanilla and Salt. Sift in flour and cocoa and mix well (add in pecan's at this point). Pour your mix into a well greased jelly roll pan (12x15). Bake for 30 minutes at 300 degree's. Take out of the oven and and cover the entire top with marshmallows. Put pan back in the oven for 10 minutes or until the marshmallows are melted. Cool well and Frost. (Thanks Nan, for the great recipe)
Frosting
1 Square Margarine
3 1/2 Tbls. cocoa
1/3 Cup Milk
Bring to a boil. Immediately take off of the stove and add it to about 3 1/2 cups powdered sugar and 1 tsp. vanilla. Mix well with hand mixer and spread over the Mud Cake while the frosting is still warm. (This is my mother's frosting recipe and it's fabulous on any cake because it spreads so well and it looks beautiful)
